GELATO – COURSES

The PreGel International Training Centers’ gelato classes have been designed with the aim to back up the professional success of each student. Our training starts with classroom lectures, continues with hands-on activities, and lasts over time with products and support from PreGel.

Fundamentals of Gelato and Sorbetto Production (3 days)

Course’s main goal it’s to educate students on how to use cold and hot process machines, as well as the proper use of batch freezers and display cases. The class also covers recipe formulation in addition to learning the trade secrets of decorating and displaying gelato & sorbetto to attract customers all year round.

Advanced Gelato Class (2 days)

This class covers the formulation of customized recipes, in-depth scientific approaches to ingredient composition and the effect of each ingredient on the final composition of gelato and sorbetto. Students will learn how to refine unique recipe formulations.

Gelato Innovation & Exploration (2 days)

This brand-New and exciting class for those with an adventurous appetite and heart for exploring what’s new and trendy in the world of gelato to really WOW your customers…let your imagination run wild.

Frozen Pops and Paletas (1 day)

As nostalgic frozen pops and artisan paletas gain in popularity, explore this trendy, fun and easy menu addition in our class. In this course students will work with a variety of techniques and recipes used to create different styles of frozen pops and paletas from small scale to large scale production.
