PreGel’s in-depth classes are designed to fit all skill levels from beginner to advanced. Our gelato and soft serve classes provide a broad understanding of how to produce these products and build a successful business based on quality. Our pastry and specialty frozen desserts classes focus on how to effectively produce and sell different pastry and dessert options. But in all cases, our signature approach has been to provide students with both a solid classroom learning experience and hands-on instruction. It is our personal goal to make sure that no one leaves our classes disappointed or ill-equipped to succeed in their business. Therefore, we make sure to teach the latest techniques in a fundamental range of traditional and trending dessert topics found on our Curriculums page. Typical Class Structure
As a general rule, classes last about eight hours and normally run from 9:00 a.m. to 5:00 p.m. (lunch included). However, make sure to check the curriculum of each class for detailed information. The classes consist of two parts: classroom theory and hands-on participation. Our Chefs are always available during breaks if you’d like to go over the class topics or discuss your individual needs. Lunch is provided by PreGel.
Because many of our classes are offered on consecutive days, we recommend that you enroll in multiple, making it convenient and flexible for your personal schedule.
Attendees are encouraged to explore the world of gelato and desserts under the guidance of our distinguished instructors. Well-trained chefs and experts in the field will bring all of their experiences to the classroom.
Awarding of Certificates
A Certificate of Completion is awarded to each student completing any of our classes. The Certificate affirms that each student has successfully passed PreGel’s required test and reached a specific standard of knowledge.
Our fully-equipped International Training Centers offer a variety of the batch freezers, display cases, blast freezers, soft serve machines, pastry tools, and equipment that will give you a great opportunity to choose from the latest technologies in the business.
Recipes and instructions are provided for class use and are encouraged to be taken home.
We suggest you dress in comfortable, casual clothing. You must wear closed-toe shoes and pants, as you will be working in a kitchen environment. Also, longer hair should be pulled back. PreGel will provide lab coats to wear during class.
Hand washing and sanitation is mandatory in PreGel’s International Training Centers for your own health and the wellbeing of others. Be sure to wash your hands following general breaks, bathroom visits, and before touching any tools/supplies or making any product in the kitchen.
Cellular Phone, NoteBook & Tablet Policy
Cellular phones must be turned off or placed on silent at all times while class is in session. Though talking on the phone during class is prohibited, you may do so in the hallway outside of the classroom if necessary. Cellular phones are permissible during scheduled break periods.
Personal Baggage Policy
Bags of any kind are not permitted in the International Training Centers, including, but not limited to:
• laptop bags
All bags can be placed on the shelf space in the wardrobe room while in class.

The students can choose between 2 different options:
• Select one of the Hotels suggested by PreGel.
• Select another accommodation, renouncing the special rates.
HOW TO RESERVE THE ACCOMODATIONS: All the students are required to personally reserve and pay for the hotel, without the assistance of the PreGel International Training Centers. All the payment terms and conditions with the Hotel must be agreed upon with the hotel.
ATTENTION: In order to enjoy the special rates, please specify with the hotel that the reservation is due to a PreGel International Training Centers course.

PreGel charges a single registration fee per person for participation in each class in the following designated amounts:
• € 249,00 + IVA Two Day Course
• € 349,00 + IVA Three Day Course
Daily lunch is made available via PreGel during all of our training classes. Please note that registration cannot be confirmed until payment is received.
PreGel reserves the right to cancel any class for any reason. In the event of a cancellation, PreGel will either transfer the registration fee for registered attendee(s) to a future class, or PreGel will refund the full registration fee to the registered attendee(s). PreGel is not responsible for any travel costs incurred due to class cancellations. Please note: registered students must contact PreGel to cancel their attendance in a general class a minimum of ten (10) days in advance in order to get a full refund. Refunds will not be available for registrants who choose not to attend a class without prior notification.
Photographs and Videos
No recordings, audio, or video are permitted during any PreGel International Training Centers classes. However, you are welcome to take photographs inside the Training Center. Photographs of anything outside of the designated Training Centers are prohibited.
If you have any allergic reactions to certain foods or ingredients please let us know before the start of the class.
Alcoholic beverages may be used in certain classes for gelato and pastry production. However, bringing outside alcohol into class is prohibited. Students may be asked to present identification to prove that they are of legal drinking age and will be held responsible for limiting their consumption of alcohol to a safe amount. Pregnant women, people who will be driving, and people on certain medications should not consume alcohol.
No smoking of tobacco or any substance(s) is permitted within the PreGel facilities or on the property at any time.
